Red wine. Savant is a blend of Syrah, Cabernet Sauvignon and Malbec from multiple vineyards on the west side of Paso Robles. The Syrah was first air dried for 3 weeks and then fermented in new French oak barrels to intensify extraction and enhance oak integration. The Cabernet Sauvignon comes from hand selected lots that represent the most intense fruit sources of our vineyards. A small amount of Malbec was blended in just before bottling to brighten fruit and soften the mid palate. 62% Syrah, 34% Cabernet Sauvignon, 4% Malbec. 100% free run juice. 100% hand sorted. 68% new French oak - Kevin Sass, Winemaker; Justin & Deborah Baldwin, Proprietors. Alcohol 14.5% by volume.
